Dark Fudge Cake Mix Cookies with Vanilla Peppermint Frosting


Hi guys! It appears I am on a dark chocolate/peppermint kick... The two flavors just go so well together! And to think it all started with a little peppermint Peeps marshmallow dipped in chocolate. I'm obsessed! My hubby wanted to take a little something to work for the holidays Friday and it was a little bit late, but I remembered I had Duncan Hines Dark Chocolate Fudge Cake Mix and some extra sugars and I got to work! ;) Needless to say, I finished these pretty quick and I was so happy with the results!

What you need:

For the cookies:
1 Box Duncan Hines Dark Chocolate Fudge Cake Mix
5 Tablespoons melted butter
2 eggs, beaten

For the frosting:
4 Cups confectioners' sugar
1/2 Cup softened butter
1 Teaspoon vanilla bean paste
1/2 Teaspoon McCormick Pure Peppermint Extract
3 Tablespoons of milk


1.) Preheat oven to 350
2.) Mix the cake mix, melted butter, and beaten eggs in a mixer.
3.) Scoop cookies out in rounded tablespoons on a cookie sheet with parchment paper. I used a medium cookie scoop.
4.) Bake cookies for about 10 to 12 minutes.
5. While the cookies bake, prepare your frosting: Beat the confectioners' sugar, butter, vanilla and peppermint extracts. Beat in the 3 tablespoons of milk until well blended.
6. Let cookies cool on a rack, frost with vanilla peppermint frosting. I used a disposable pastry bag with a large round tip to swirl frosting on the cookies, beginning in the middle and swirling out. Top with sprinkles if desired. Peppermint sprinkles might be good on here as well for some extra pepperminty freshness! Enjoy!
