Banana Mango Coconut Cream Pops!

One of my favorite childhood memories was walking a few blocks down from my grandmother's house in Monterrey, Mexico and getting a mango milk popsicle from a "paleteria" called "La Michoacana". That happened once every summer when we visited from Chicago so we didn't get them all the time. They were the creamiest, most delicious popsicles I had ever had, and I still "squee!!!" with joy if I manage to get a hold of one at some of the many Mexican shops popping up everywhere in our city. These are delicious but also packed with a lot of sugar.

I had been wanting to try a healthier recipe but had not gotten around to it. So today my mom came over to help with our little guy while my husband was out since I have been sick and that child has entirely too much energy for me. Anyway, she proceeded to peel and cut up the 3 mangos I had sitting in my fruit bowl and I decided it was time. Time to make my own creamy mango pops! I got my tired and sick hiney up from the couch and got out my ingredients. Honey, Mexican vanilla, plain organic yogurt, light coconut milk, and obviously, the mango. I threw in about a half of a banana for extra sweetness and creaminess. After blending in my food processor, here is what I got: (recipe below)


Approximately 1 cup of peeled and chopped honey mango
Half of a large banana
4-5 tablespoons of organic plain yogurt
2 heaping teaspoons of honey
1 teaspoon Mexican vanilla (or any vanilla extract you have on hand) 
3/4 cups of light coconut milk

Blend in food processor or blender until smooth and pour into popsicle mold. Freeze until set and enjoy!

I have an express pop maker and managed to get 11 out of this recipe. Hubby and baby approved, they LOVED them. Try them! You won't regret it!
