I had seen some chocolate covered cherries on a website around Christmastime that looked delicious. I found out they were cream cheese filled, and after seeing the price per pound I thought, "Hmmm, I can make these myself!" I set out to find a recipe for sweetened cream cheese and found a recipe for cream cheese stuffed strawberries. The mix was really good and I used orange juice instead of the liqueur because I was expecting. I have to mention the mix was a teeny bit on the runny side so next time I might use either a bit more sugar or a little less juice or liqueur. To stuff the cherries, I used a disposable Wilton decorating bag and a round tip so I could stick it in the hole where the cherries are pitted and squeezed until I could see a little bit of cream cheese coming out of the sides. After refrigerating the drained maraschino cherries with the cream cheese, I melted the Baker's brand dipping chocolate and proceeded to dip each cherry. I added the pearly sprinkles while the chocolate was still melted so they could stick. The result was very tasty!
