Blueberry Sour Cream Coffee Cake


I love blueberries, in any way, shape or form. Fresh, preserved, frozen, in pancakes, you name it, I love them! So when I came across this recipe by Duncan Hines, yep, you guessed it, I just HAD to try it! I made the Blueberry Sour Cream Coffee Cake this morning, and I am so glad I did! The lucky thing is, I came across the recipe by looking at their Vanilla Amazing Glazes, but I really don't care much for store bought or canned frosting. I like to make my own! I thought a cream cheese glaze with a hint of lemon would be amazing on a blueberry cake, and I was right. I found the recipe for the Lemon-Cream Cheese Glaze on MyRecipes.com, but I had to modify a little. I didn't have fresh lemons, therefore no zest, so I used bottled Key Lime juice, and it turned out wonderfully! I also made my own blueberry preserves, using this recipe. Again, modification due to no lemon, but the Key Lime juice tasted just fine. I also used a little over a half cup of honey since I *gasp!* ran out! I was surprised with how delicious it was, a little on the tart side, but I love anything tart or sour. :) Try this sometime, if you are in the mood for a yummy breakfast treat, or just when the craving hits.
