Ahhh. Love is in the Air...
Valentine's Day. A day to send (and receive) countless bouquets of roses, chocolates, balloons and sweet little love notes. I chose to give my sweetie something I know he will use forever, or just for a very long time (a Rogue fitness steel cup and a jump rope - don't ask), and something I made with my own hands. I am talking about a decadent, fudgy little slice of heaven called Dark Chocolate Torte. Paired with fresh raspberries, I guarantee you'll fall in love all over again! You also have my permission to make this any other day of the year!
Dark Chocolate Torte
Recipe adapted from eMeals - an amazing way to make breakfast dinner, and lunch easier! (Check out my link in the sidebar*!)
Ingredients:
(Butter & Flour for Pan)
7 oz chocolate baking squares (I used Baker's Semi-Sweet because it was the only one available)
1/2 cup of butter (1 stick)
4 eggs, separated
1 cup sugar
3 Tbsp flour
Optional Garnish (highly suggested!)
Powdered sugar (for dusting)
Fresh raspberries
Instructions:
Butter and flour a 9" spring-form pan. (I used a regular 9" pan and that worked fine as well). Preheat oven to 275 degrees F. Melt chocolate and butter in a double boiler or metal bowl over a pan of simmering water; stir until smooth. Remove from heat; cool for 5 minutes. In a large bowl, whisk 4 egg yolks, sugar, and flour. Stir in chocolate mixture. In a metal bowl, beat egg whites with an electric mixer on high until stiff peaks form. Gently fold egg whites into chocolate mixture, making sure to NOT over mix. Pour into pan; bake for 45 minutes. Note that a toothpick will not come out clean. Cool 10 minutes before removing walls of pan (or in my case, just let it cool in the pan and slice and serve from pan). Cool completely and garnish with powdered sugar and berries. Enjoy!
