Today was the celebration of the 1st birthday of a sweet little girl with a Minnie Mouse themed birthday. Not too much to say about this one, except that I used my favorite Cool Whip frosting recipe for the cupcakes, and my favorite easily "smoothable" frosting ever for the smash cake. Buttercream recipe can be found here. The cupcake frosting has such a light delicious flavor, it's not horribly sweet like some other frostings, and it is amazingly easy to make! I also used homemade fondant for the bow and polka dot accents, and the recipe can be found here. It has a much better flavor than the one you buy at the store and is very easy to work with.
For the Cool Whip frosting, I got the recipe by word of mouth from a friend, who got it from an aunt, which means I don't have an original source. Whoever came up with it, THANK YOU! This frosting can take on just about any Jell-o pudding flavor you can buy.
What You Need:
1 8 oz tub of Cool Whip Brand topping (My favorite is the Extra Creamy recipe, though the regular will work as well). I try not to use the "Lite" or "Fat Free" as the frosting might come out more grainy.
1 3.3 oz pack of White Chocolate Jell-o pudding (I have tried sugar free and it's a no-go, it's definitely more grainy with the sugar free).
1/2 cup milk (It is okay to use skim, 1%, 2% or full fat here as it does not seem to affect the frosting)
I have found the best way to make this frosting is to mix the tub of cool whip with the milk first, either with a hand mixer or stand mixer (using the whisk attachment) until completely combined, then slowly sprinkling in the pudding until incorporated each time. The frosting is easy to double using 2 tubs of Cool Whip, 2 packs of pudding, any flavor, and 1 cup of milk. Make sure to keep your cake or cupcakes refrigerated! A double batch of the frosting managed to cover 4 dozen cupcakes. Enjoy!
