Good afternoon! I will make this post short, mainly because I didn't come up with this recipe and I have to get back in the kitchen to make more stuff. *wink* I have this strange obsession with Maine. I don't know if it's the location, the moose, the lobster, I could go on and on, but for some reason I am in love with this state. One of my dream vacations came true last September when hubby and I packed up 18 month old baby and took a 22 hour drive to Ogunquit, Maine. Yes, we DROVE. We had a few mishaps along the way, none too serious, but it was most definitely an ADVENTURE. And New Jersey, I will never forgive you for tricking us with your tolls, OR for breaking our van down on your turnpike.
Anyhoo, I had pre-planned every single restaurant we were going to, how many days we were going to the beach, what we were buying at Cabela's, it was a 3 year trip in the making. What had me drawn to Ogunquit? No idea. It was a beach, it looked pretty, and I said we were going. So there. I decided we would go to Footbridge Lobster in Perkin's Cove for our Lobster Rolls, which we ended up having for lunch on a rainy Tuesday and we went back for more lunch the day we left. It was a sad day for me.

So back to my reason for this post. A blogger I recently started following (Bakeaholic Mama) posted some New England Lobster Salad Rolls and I was inspired. INSPIRED I say! Needless to say, I *HAD* to make these. I researched how to cook a lobster, be it steamed, baked, broiled, whatever. I contacted our local seafood shop, only to learn they had Southern lobster, which I read is not as good as Northern lobster, so I declined. I went grocery shopping and couldn't find frozen lobster tails anywhere, and then I spotted a package that read "Langostino Lobster". They looked like mini lobster tails, were pre-cooked, and looked easy to prepare. It's not real lobster, so if you plan on making some REAL lobster rolls, don't buy this! I am not too much of a food snob so I wasn't worried. The second thing I DIDN'T have was the ROLL. This is not any ordinary hot dog roll. This bread is soft and buttery and just simply amazing. I found a recipe on Food.com that did just the trick. You can't just use any old hot dog bun! The recipe for the rolls can be found HERE. It's pretty long- these are easy to make, but also a little time consuming. We ended up eating dinner at 9:00 p.m! I followed the recipe from Bakeaholic Mama's site (click the link for it) and it was simply delicious. I also didn't have the shredded lettuce or scallions, but it was great nonetheless.
So if you love lobster and want to try something a little different. Try these. You will want to visit Maine for this reason only.
