Strawberry Margarita Cupcakes & Cake

This week I had the pleasure of making some cupcakes and a cake for a sweet coworker that is getting married next month. She had really liked some strawberry margarita cupcakes I had made before, so she requested the same for the shower. Below are the ones I made last year, with the Jose Cuervo Strawberry Lime Mix since that's all they had at the store. I used the recipe from Betty Crocker's website, Strawberry Margarita Cupcakes made by Angie McGowan at Eclectic Recipes. They were delicious!



Here are the ones I made for the shower, except I made them with vanilla butter cream frosting and regular strawberry margarita mix. Somehow the frosting still tasted like it had a tang of tequila, so no worries on not having made the original frosting. It still tasted good! I also made a vanilla cake with teal frosting to match the colors of a recipe book we gave her with favorite recipes written by each coworker. I thought was a sweet idea!














Unfortunately I didn't have my regular camera with me, so I took a couple of shots with my phone at work.
