Blueberry French Toast
There are certain recipes you save for special occasions, and I think Mother's Day calls for a special occasion, yes? You can be rest assured, if you make this Blueberry French toast, your mother will declare you her favorite child and buy YOU gifts... Yes, it is THAT GOOD. The recipe was given to me by my boss, who made it for a special breakfast they had for a coworker and me when we first started work at the office. (We are a bunch of eatin' fools there!) I had to have the recipe, and I am so excited to share it again*!
What you need:
1 1/2 cups brown sugar
1 1/4 teaspoons of cinnamon
1/4 cup melted butter
12 slices of French bread (I ended up using 18, I had small slices)
1 1/2 cup fresh blueberries
5 eggs
1 1/2 cups milk
1/2 teaspoon salt
What you do:
Grease a 9x13 casserole dish with butter.
Mix your first three ingredients and put half of the mix in the bottom of your dish. Cover the mixture with 9 slices of bread (if you have the small bread), then sprinkle with half of the remaining sugar mixture and half of the blueberries over the bread. Add slices of bread on top of the 9 slices (like small sandwiches) and then sprinkle the remaining half of the sugar mixture and remaining blueberries on top of the top bread layer.
Beat or whisk eggs, milk and salt and pour evenly over the bread. Press down a bit with a spatula or burger flipper, and here comes the hard part- REFRIGERATE OVERNIGHT! Yes, you have to wait to eat this wonderful breakfast... Bake uncovered at 350 degrees for 40-45 minutes. It says to serve with syrup on the side, but this is wonderful enough on it's own! Enjoy!
So make sure you make it Saturday night and bake it for your momma Sunday morning!
