I went to Allrecipes for the butterscotch cake and found this recipe. It had good reviews, though there seemed to be a complaint about the chips sinking and sticking to pans. Nixing the chips was a great idea. What I did instead with said chips, was make a butterscotch ganache. I wanted to add a little something other than just frosting, so I had ideas of a delicious soft, yet solid ganache in between layers. I was sadly mistaken, as the ganache never solidified, even though it was in the refrigerator for several hours before I put the cake together. I also didn't add the sugar and almonds since I was preparing a layered cake.
Now, since I had never made a butterscotch cake before, I wasn't sure what frosting would be good, but I had some leftover cream cheese frosting and thought I would give it a whirl. I am SO glad I did!
I am posting the links to the recipes I used to keep this post from being too lengthy. The cake recipe was from Allrecipes, Butterscotch Cake I.
For the ganache, I heated up 1 cup of heavy whipping cream until just before boiling (I like using the Land o' Lakes brand) and poured it over 11 ounces of Hershey's Butterscotch Chips while whisking until smooth. Except I used a fork because I couldn't find my whisk. ;)
I made a dam between layers and spooned the ganache over the frosting on the bottom layer since it never solidified. It ended up soaking into the bottom of the top layer for a yummy butterscotch experience!
For the frosting, I used the recipe for Professional Cream Cheese Buttercream Frosting by WickedCreations that I found on Tasty Kitchen.
