I meant for this post to be up earlier in the week, but boy, what a busy week it has been! I made a cake for a birthday and about 5 dozen cookies for a baby shower mid-week, which I normally don't do. However, these were "smaller" baking goods than usual, so I made an exception. Obviously, it took up more of my time than I wanted it to, but I enjoyed making the cake and the cookies so it was worth it.
Now this Easter ended up being at my sister-in-law's house, with the in-laws bringing the meat, while the rest of us brought sides and goodies. I found a recipe on a coupon insert from Dole that had me drooling the moment I saw it - Pineapple & Cream Cheese Upside Down Cake. (Click link for recipe.) The cream cheese has lemon Jello mixed in it, though I think it could have used more lemon flavor. Overall, it was tasty, but I still think it needed a bit more lemony tang in the cream cheese mix. If you plan on making it, make sure you do NOT use a spring form pan, as I saw the bad reviews it received for leaking and making a mess when using the spring form. I used a regular 9 inch cake pan and it came out fine.
Next, I made Jello Jiggler eggs. Rainbow ones! I had never made them before and had brand new molds I had been waiting to use since I got them AFTER Easter last year. I figured I would put every delicious Jello flavor in there for good measure! Here is how they turned out:
